  • 2 teaspoons baking powder
  • 1 teaspoon baking soda

  • 1 teaspoon vanilla extract
  • 1 tablespoon butter, softened, or as needed, for greasing, plus more for serving

Directions

Step one

Preheat the griddle to 300°F (175°C).

Step two

Combine milk and vinegar in a small bowl or a 4-cup liquid measuring cup, mixing them well.

Step three

Combine flour, sugar, baking powder, baking soda, and salt in another bowl, whisking them together.

Step four

Whisk eggs in a large bowl until smooth. Mix in vanilla and milk. Gradually add the flour mixture to the egg mixture, whisking until just blended (expect a slightly lumpy batter). Allow it to rest for 3 minutes before giving it a gentle stir once more.

Step five

First, melt a small amount of butter on the griddle and then gently wipe it with a paper towel to create a light coating (avoid excessive greasing). Spoon the batter onto the griddle in 1/3-cup portions. Cook until bubbles start to form on the surface of the batter, approximately 2 1/2 minutes.

Step six

Flip the pancakes and continue cooking until they're browned on the other side, roughly for another 1 1/2 minutes. Repeat this process with the rest of the batter. Serve promptly with butter and your choice of toppings.
